【新年】气炸薯条、薯片、甜薯条

2023年1月1日,元旦。
小小阿立前些天脸书家庭小群报告:“烤牛排、气炸美味薯条(grilled steak with mushroom sauce and really good air fryer potatoes!)”
有图有真相:
小小阿立:“雅蜜!肯定还要再做(Potatoes came out really tasty! Will definitely do them again)”
问:“如何做的?”
小小阿立:“水煮土豆条,加盐和小苏打。沥干后稍抹些油。华氏400度气炸20分钟,不时翻身(Boil the potatoes in water with some salt and baking soda. Drain and coat with some oil. Then air fry at 400 for 20 minutes,turning occasionally)”
又:“还想做气炸薯片,真馋人(I want to try air frying potato chips too .. they look so good)”
小阿立(哥哥):“网上还有(水煮时)用醋的招数。”
小小阿立(弟弟):“有趣,下次试试用醋(Oh interesting! I’ll try vinegar next)”
小小阿立说干就干,真的试了用醋。点评:“醋的质量一致性歉差,不如小苏打(Consistency is very different with vinegar. Baking soda breaks down the potatoes whereas the vinegar doesn't)”
问:“用的神马土豆?”
答:Yukon Gold(他试过别的土豆,不如Yukon gold)。
又:“上次应该炸的时间再长些。。。(Last time I should have baked them longer .They were crispy at first but then got soft really quickly after. Taste was very good though. Soft and fluffy,下图)”
这次更好了:
小小阿立再总结:“更喜欢小苏打版本(I like the baking soda version better)”
小小阿立不断尝新,炸薯片:“Made potato chips! 三世 loved them”
炸薯片:
阿立三世爱吃:
再尝新:“炸甜薯条(Sweet potato fries)”
这下引起阿立的馋虫了(甜薯养胃健康,专科医生建议吃的)。
问:“甜薯也要水煮吗?气炸温度和时间?(Do you boil the sweet potatoes as well? Fry time and temperature?)”
小小阿立:“没有水煮。375度大约炸15分钟(Didn't boil them this time. 375F for 15 minutes or less)”
记下了,三克油!
